What causes the pH of vinegar to become acidic?
Lactic acid fermentation is a process in which anaerobic bacteria consume sugar and convert it into lactic acid, ethanol, and other bacteria. When fermentation involves only lactic acid bacteria (such as fermenting yogurt or vegetables), the culture stops when there is no more sugar to consume, and the bacteria die.
Fermented drinks such as water kefir and kombucha and fermented fruits also contain yeast. It may be added to the fermentation mixture, present in the material during fermentation, or present in the culture. Yeast stimulates additional production of alcohol during fermentation. If fermentation is aerobic (exposed to oxygen), an extra type of bacteria, Acetobacter, comes into play. This bacterium converts available alcohol into acetic acid. This is why vinegar is acidic. Acetic acid also inhibits the growth of other microorganisms, which is why vinegar is used as a natural preservative.
Another process for making vinegar involves the fermentation of distilled alcohol. The resulting colorless liquid is diluted to standard concentration and filtered to remove all impurities.

There are two ways to describe the strength of vinegar.
Its acidity is measured as the pH value.
its concentration (also called particle strength). This is the amount of acidity in a given volume of liquid and is measured in percentages.
How is the PH of vinegar measured?
To measure the pH of vinegar, simply use a pH strip. You can tell the strength of the vinegar by the color of the finished product. Distilled white vinegar typically has a pH of around 2.4 and a concentration of 5%. The lower the pH, the more acidic the vinegar will be. pH levels below 7 are classified as acids.
Determination of acidic strength of vinegar
Determining the amount of acetic acid in a vinegar solution (determining whether the vinegar is an acid or a base) requires special equipment.
Acid test kits can be purchased at beer and wine supply stores for just a few dollars, but they are designed to test the acidity of wine and typically do not measure acidity above 1%. To be described as “vinegar,” a liquid must contain at least 4% acetic acid.
Test kits to measure this amount of acid typically cost between $50 and $100. Basically, you add the vinegar you want to test to a flask and dilute it with water. then addPhenolphthaleina chemical that changes color at different levels of acidity.
A special flask marked with measurements in milliliters is filled with a solution of sodium hydroxide, a caustic chemical that must be handled with care. This is called a titrant and is slowly dripped into the vinegar.Phenolphthalein Stir until the vinegar solution turns pink. At this point you can measure the amount of sodium hydroxide used.
Ideally, repeat this step three times to improve accuracy. Once you have a reliable value for the amount of titrant solution, you need to do the following:please do some calculations Convert that amount to the standard measurement of grams of acetic acid in 1 liter of vinegar. It will be a percentage of the strength of the vinegar.
Meaning of PH in vinegar
This level of precision is not something that home hobbyist kitchen vinegar makers typically use. If you’ve ever made vinegar using wine or fruit scraps, consider it a great addition to salad dressings and recipes.
People have been using vinegar for preservation for centuries without such testing. If you are using homemade vinegar for your pickling project, you should at least measure the ph level of the vinegar and make sure it is below 4.0. This pH prevents the growth of most harmful bacteria and molds.
